Put 2 eggs in bowl with 1 ½ cups of milk with some jalapeno juice (amount of
jalapeno juice depends on your desired taste) and beat
In a separate bowl, pour 2-3 cups of cornmeal
In 12-14 inch skillet, pour in vegetable oil to the halfway mark of skillet.
Bring to boil.
After oil is boiling, place a fillet in the milk and egg bowl. Lift fillet out
of the milk and eggs and place into the cornmeal bowl (make sure that both
sides of fillet are covered). Place battered fillet in skillet and repeat with
When the batter is a golden brown remove the fillet from skillet and serve with
your desired sides.
